Dr. Francis Pottenger conducted a now-famous independent study about the long-term effects of eating cooked foods. The study involved 900 cats over the course of ten years. During the study, Dr. Pottenger fed two sets of cats raw milk and meat. He also fed another three sets of cats pasteurized milk and cooked meat. The cats that ate the raw food were healthy, disease-free, and produced healthier kittens generation after generation. At the end of the first generation, cats that ate cooked foods were lethargic and began to suffer from allergies, infections, and other maladies, including kidney, heart, thyroid, and gum diseases. Each succeeding generation of cats that ate cooked food showed progressively more illness and disease. The third generation of cats that ate cooked food were not even able to produce offspring.

Protease: Breaks down protein to peptides and amino acids.
Bromelain: Protease enzyme that also breaks down protein.
Amylase: Breaks down starch "-1,4 glucan bonds". Breaks down carbohydrates, starches, and sugars that are prevalent in potatoes, fruits, vegetables, and snack foods.
Malt Diastase: Digests maltose, malt and grain sugars. Breaks down complex and simple sugars.
Lipase: Breaks down fats (triglycerides and other lipids) and oils. Useful in aiding in weight control, maintaining and enhancing cardiovascular health, and may help maintain proper gall bladder function.
Lactase: Aids in the digestion of lactose. Lactase breaks down lactose that is found in milk sugars. Useful for individuals suffering from lactose intolerance.
Cellulase: Cellulase increases the availability of anthocyanidins, powerful antioxidants from grapes and other berries. Cellulase breaks down fiber, helping to solubilize nutrients from fruits and vegetables.

Phytase: Breaks down phosphate and digests phytate. Phytate is a mineral-binding agent that reduces the bioavailability of certain minerals such as zinc, iron, and calcium. When cooked grains are eaten, almost none of the phytate is degraded. Results from research by Ann-Sofie Sandberg of Goteborg University in Sweden, indicate that dietary phytase is critical for human digestion of phytate.
Pectinase: Breaks down pectin that is found in fruits, which allows these vital nutrients to be utilize by our body.

The pH in the human digestive tract varies greatly (see Human Digestive Tract pH Range Chart on the left side). The pH of saliva is usually between 6.5 - 7.5. After we chew and swallow food it then enters the fundic or upper portion of the stomach which has a pH between 4.0 - 6.5. This is where "predigestion" occurs while the lower portion of the stomach is secreting hydrochloric acid (HCI) and pepsin until it reaches a pH between 1.5 - 4.0. After the food mixes with these juices it then enters the duodenum (small intestine) where the pH changes to 7.0 - 8.5. This is where 90% of the absorption of nutrients is taken in by the body while the waste products are passed out through the colon (pH 4.0 - 7.0).
Where do enzymes come from? Enzymes come from one of three sources; plants, animals, or microbes (see Enzyme Comparison Chart below). Plant enzymes (bromelain and papain) work in a wide pH range but only digest some proteins. Animal enzymes (pepsin, pancreatin) work in a very limited pH range and only digest some of the food groups. The microbial enzymes (Elite-Zyme Pro) are the only ones that work in a wide pH range and will digest all of the food groups.
